Happy Halloween :)

Vince and I have a VERY busy Halloween weekend planned, but I am really excited!

Tonight we are going out with his family to celebrate his brother's 30th birthday and then after dinner we need to carve our pumpkins (which we bought awhile ago but never had time to do). Saturday obviously is Halloween, so since we have the party that night I need to get the cleaning and cooking done before our doorbell starts ringing with little kids wanting candy. I love handing out candy to kids, they are always so cute in their little costumes :) I already have a big bowl of candy down in the foyer just waiting for the first trick or treaters..

Then at 8 we have about 30 of our favorite people coming over to celebrate! (and to watch the PHILLIES of course!) On Sunday our neighbors are having a little party at their house at 1 for the E A G L E S game, which we are going to have to leave a little early from to make it to our hot air balloon ride (so excited!) at 4 :) We will then finish off the weekend with dinner at Ludwigs (a cute little restaurant with great food).

Well, like I said it's going to be a busy weekend, but it should all be a lot of fun! (wish I could take off work Monday to relax from all that fun haha) Hope you guys all have a great Halloween weekend too! :)

Thankful Thursday

I am thankful to have a job I really enjoy and also very thankful that I have satellite radio in my car to keep me entertained as I drive around doing that job all day :)

I was reminded today how thankful I am that I am no longer in high school... you couldn't pay me enough to go back and have to deal with all that b.s drama anymore

I am thankful for all of the technology available these days so that even though my family moved and now lives in Missouri, I can still talk to them whenever I want through phones/emails/webcams etc.

I am thankful for Vince giving me my anniversary gift early so that we can go in a hot air balloon ride this weekend when it's still not freezing and while the leaves are still pretty colors <3

I am thankful for everyone offering to bring food and drinks to our Halloween party Saturday so I don't have to worry about doing it all :)

And lastly, I am thankful for Vince calling and asking if I want to go out to dinner tonight so I don't have to worry about making anything!

Wishful Wednesday take 2:

Ok, so this was my first "wishful wednesday" post and I was just reading other peoples posts and realized I messed up.... I was supposed to write my answer to the statement, 'I wish' .... I was six years old and going trick or treating, and my costume would be _____!So, I am going to try this again:

'I wish' .... I was six years old and going trick or treating, and my costume would be Hannah Montana...

.. because if I was 6 then I would probably be a Miley Cyrus fan, but since I am 24 I obviously am way too old for that... ;-)

Wishful Wednesday

I wish that I was going on my honeymoon again next month like I was this time last year.

We went to the Dominican Republic and it was g o r g e o u s. We wanted it to be just about us and nothing else, so we turned our cell phones off the ENTIRE week and only checked our emails twice (in case we missed something important) and we had the best vacation ever!

Oh and PS- I also wish for the PHILLIES to win the world series :)

Quick. Easy. Delicious.

Since it was a cold and rainy day I was thinking about making a big pot of warm chicken noodle soup for dinner, but then I remembered I had a great simple recipe for chicken noodle casserole which sounded even better.  So I made that instead and was glad I did because it was REALLY good :)

(I forgot to take a picture of mine before I had already served it, so this is the one from the recipe, but it doesn't have the French's fried onions)

I changed just a couple things in the recipe and Vince and I both really liked it. If you ever want a quick and easy meal this is a great option.

Ingredients:
2 cups cooked chicken
2 cups egg noodles, cooked and drained (I like the medium size)
1 can cream of mushroom soup
1 cups frozen mixed veggies (I also added some cut up celery, but you don't have to)
1/2 cup milk
1/4 cup grated parmesan cheese
1/2 cup shredded cheddar cheese
1 cup french's fried onions
1/4 tsp pepper
1/4 tsp salt

Mix everything (except cheddar cheese and fried onions) and bake at 400 degrees for 20 minutes. Then take out and sprinkle the cheese and friend onions on top and bake for an additional 3-5 minutes (or whenever the onions are a little crispy and the cheese is melted). Then let cool for a few minutes and enjoy. ;-)

Not Me! Monday

I did not pre-order New Moon tickets for the first weekend the movie comes out, I would never be that obsessed with a teen love story... I also did not just finish reading New Moon for the 2nd time to get ready for the movie.. nope not me

I did not get bored last Monday night and decide to dye my hair using a box of hair color and my hair did not turn out o r a n g e... (and just fyi i did however fix my hair so I no longer look like a freak)

I did not go out and spend way too much money on a long brown wig for my halloween costume, nope that would be completely unnecessary and that is not something I would do just to wear one night.. definitely not me

I did not go see Paranormal Activity again because my friends wanted to and I did not get even more freaked out seeing it for a second time, I am an adult and scary movies do not bother me at all.. nope not me

I did not go out with friends Saturday night and drink way more than needed, and that did not result in me sleeping in late Sunday morning and then craving gross greasy fast food.. ugh I would never eat that stuff... not me

I did not pick Ty up from the groomers yesterday and get really annoyed that the lady cut his hair way too short even though she knows I don't like it short like that.. clearly I know it's just hair and it will grow back, I would never get upset about something so silly...

Halloween Treats

So next Saturday is Halloween (yay!) and Vince and I decided to have a halloween party! (after all the kids in our neighborhood are done trick or treating of course!) So I am starting to look up some themed appetizers to make for the party :) I have found a ton of quick and easy recipes, but these are some of my favorites:

Mini Pumpkins (aka cheese balls with pretzels)

Deviled eggs with olives for spiders

Eyeballs (mini doughnut dipped in white chocolate)

Spider cookies

We will have some other basic food and dips, but I thought these would be fun to make too :)
